It all began with a short trip to South Australia to visit a friend that led to the discovery of this beautiful symphony in the mouth by orchestrating the combination of nuts and seeds.
Dukkah, a condiment of mixed nuts and seeds, are traditionally Egyptian, often referred to as dipping sands taken together with olive oil and bread. What is exciting about Dukkah is that it takes a very different form in taste & texture when the combination of nuts and seeds changes. This is what I like most about it. To me, it is free-form in terms of palette. After that trip to South Australia, I started to research and test my own recipes of Dukkah. I created the cashew Dukkah and hazel- nut Dukkah to satisfy the local palette, and with a sweet and a spicy twist to my Dukkahs respectively.
